Quinoa Burritos

Have you ever thought about making something, then wondered if you were crazy for even trying it? 

That's how I made this recipe that thankfully ended up tasting amazing!  Seriously, I kept wanting to just chow down on more of it!

The recipe is my favorite kind, easy, inexpensive and tasty!

Quinoa has been in the news as a great grain to eat over the last few years. It's a complete protein, which is rare in a non meat source, and has about twice as much fiber as other grains. Quinoa also contains iron, lysine, magnesium, B2 and maganesse. (source)

2 cups of Quinoa, white or red
4 cups of Water
1 cup of chunky Salsa (ideally organic)
16 oz of frozen Corn (preferably organic to avoid GMO's)
1 can of Black Beans (try to find BPA free, like Trader Joe's brand)
shredded Cheddar Cheese
Sour Cream (optional, and ideally organic)
Avocado slices (optional)
Corn or flour tortillas (optional)

Bring the water with a little salt to a boil, then add the quinoa and cook to package directions. When the quinoa is completely cooked the white ring will pop out the side of it.

Once the quinoa is almost totally cooked add the salsa and cook for 1 minute. You can choose how spicy you'd like your salsa to be, we went mild for the kiddos. Then mix in the black beans (rinsed off) and the frozen corn. Cook till all ingredients are heated through.

Tortillas are optional, we used them but it was also really good without them. Top the quinoa mixture with shredded cheese, sour cream and avocado slices.


Serves 6-8 people

If you don't need this much food you can freeze leftovers, or cut the recipe in half while using the same amount of beans. Happy eating!
