Tomato and Fig Appetizers!

Recently we had some friends over for dinner and I did something I never do, I made appetizers!  The meal itself is usually enough to keep me busy, but I wanted to have some extra fun and make something special.

For the best flavor nothing beats seasonal foods.  Right now two very fun and versatile foods are here to play.  Figs and tomatoes are both high in nutrients, and can make some really great appetizers!


Tomatoes w/ Goat Cheese

2-3 Tomatoes (preferably Roma, but I used bigger ones)
Soft Goat Cheese
Fresh Basil
Olive Oil
Salt and Pepper

Slice the tomatoes into about 1/4 inch thickness.  Put 1-2 tsp of goat cheese on each tomato slice and squish it down a bit to make it stay.  Wash and slice the basil and sprinkle it on top, then press it into the cheese a little.  Drizzle the finished product with olive oil, then sprinkle with salt and pepper.

These are delicious, especially if you have some tasty garden tomatoes to use!


Have you ever tried a fresh fig?  They look a little disturbing with their brownish exterior, but upon first bite become a treat that has understandably been savored for centuries!

Until about a month ago I've never had a fresh fig.  I've tasted Fig Newtons, and I'm not a fan, so I presumed that I wouldn't like fresh figs either.  Boy was I wrong!  They are so refreshing and tasty!! Seriously, I keep day dreaming about eating more of them.

At that time I was able to get 2 lbs. of them from Trader Joe's for only $4.99.  Not organic, but I washed them with a fruit and vegetable spray.  At my local health food store they were organic, but unfortunately there were only about 6 of them for $5.  More than I as willing to pay.  In hind sight I'm craving them so much maybe I should have splurged.  :)


Fresh Fig Canapes

Ingredients:

Fresh figs
Soft goat cheese
Pistachios
Raw clover honey
Dash of salt

These were also very easy to make, fun looking, and taste amazing!  Each of the appetizers can be served with crackers, or as is.
