Fiesta Chicken Soup

A few days ago I made the most amazing soup I've ever tasted anywhere, and it came from my kitchen! Yes!!

I'm so excited that a food that amazing could be made at home, not in a restaurant.  And now I'm going to share the amazing recipe with you.  Ohhh just remembering the taste makes me crave it all over again!

Fiesta Chicken Soup

  • coconut oil or butter
  • boneless skinless chicken thighs
  • red onion
  • garlic
  • organic celery
  • organic carrots
  • fire roasted chilies 
  • diced tomatoes
  • chicken broth
  • chili powder
  • cumin
  • granulated garlic
  • Salt & pepper, to taste
  • organic corn tortillas (omit if paleo)
  • spinach
  • Topping Ideas:
  • Freshly sliced avocado
  • Sour cream
  • Cheddar (I used raw)
  • Scallions
  • Crispy tortilla strips
  • Lime

The first thing that hit me when I looked at this recipe was how healthy all of the ingredients are.  The one precaution I'd suggest is to buy a BPA free brand of the canned tomatoes.

I love Muir Glen because they have organic tomatoes with BPA free cans, and they're available online and at many stores, including Target and Costco.  Tomatoes are the hardest on cans with BPA in them because the high acidic content wears the lining off the cans very fast.

I made only a few variations to the recipe, out of necessity for what I had on hand.  I made as many of the ingredients organic as I could, including the canned tomatoes, chicken, and vegetables.

For the chicken broth I only had one 32 oz. box of chicken stock, so I just used that instead of the 2 required.  I didn't have the fire roasted chiles so I used a raw jalapeno seeded and chopped.

When it came to seasoning I need to make sure my kids could eat it, so I cut the amount of chili powder down to 1 heaping teaspoon.  Instead of granulated garlic I used 1 big teaspoon of garlic powder, and finally I didn't have the spinach so I just skipped it completely.

If you skip anything make sure it's not the tortillas.  They totally make the flavor awesome!  It makes the soup pop and burst with flavor.

The recipe (even without the second box of chicken broth) was enough for 2 meals for our family.  We topped our soup with raw cheddar cheese grated, organic sour cream, and slices of avocado.
