Make Mint Chocolate Chip, and Cookies and Cream, Ice Cream

I scream, you scream, we all scream for ice cream!!

Summer just screams out for us to eat ice cream. With its cold creamy goodness melting on our tongues, who can resist!?


Here are very easy recipes for making two really mouth watering flavors!




Mint Chocolate Chip

What you need:
Ice Cream Maker
2 cups of Milk (preferably organic, or raw)
2 cups of Heavy Whipping Cream (preferably organic)
1/2 cup of Raw Cane Sugar
2 tsp. Peppermint Extract

For the chocolate chips:
1/4 cup Coconut Oil
1/2 cup Cacao Powder (or cocoa powder)
 1/4 cup Maple Syrup (grade B is best)



Start by melting the coconut oil over a low heat in a pot.  When it's melted let it cool for just a minute, then stir in the cacao powder and maple syrup, until well mixed.  Put parchment paper on a large pan (like 9X13) then pour the mixture on it.  Spread it out till it's as thick as you'd like it to be.  For chocolate chips I'd recommend about 1/4- 1/8 inch.  Put in the freezer.

MintPut all four ingredients for the ice cream straight into the ice cream maker, then turn it on.  I know recipes call for mixing first, but I like things to be as easy as they can be and still work, and well dumping it all in has worked fine for me.

In about half an hour the ice cream should be starting to thicken up.  Take the chocolate out of the freezer and cut it into small pieces, then pour the pieces gradually into the ice cream machine.  Stop when the pieces are just mixed in.

Cookies and Cream Ice Cream -gluten free option

What you need:
Ice Cream Maker
2 cups of Milk (preferably organic, or raw if you can get it)
2 cups of Heavy Whipping Cream (preferably organic)
1/2 cup of Raw Cane Sugar
10-12 Trader Joe Oreo cookies (they're trans fat free, and they sell a gluten free option)

(Gluten free) Cookies and Cream Ice Cream!




Put the milk, cream, and sugar into the ice cream machine and turn it on.  When the ice cream is starting to thicken chop up the Oreos and add them slowly as it mixes.

Turn off machine and chow down!
