Homemade Vanilla Bean Ice Cream


This year I decided to break down and buy something I've dreamed of owning.  An ice cream maker!

So far I've made made frozen yogurt, Icees, and now ice cream.  And it is sooooo good!!!


Here is the simple recipe for making vanilla bean ice cream... (based on this dairy free recipe from the coconut mama).



Vanilla Bean Ice Cream
2 Cups of Heavy Cream (preferably organic)
1 1/3 Cups of Milk, either 2% or whole (preferably organic)
1 Vanilla Bean- whole
2/3- 3/4 Cup of Sugar (preferably organic)
1/2 tsp. Vanilla Extract (optional)
Small dash of Salt

Pull the side of the vanilla bean open length wise.  Put all the ingredients into a blender or food processor. Process on high until the vanilla bean is completely cut up and mixed in.  Put into the ice cream maker and start.

30-40 minutes later enjoy your fresh homemade ice cream!


I love all those little bits of vanilla bean goodness in it!  The vanilla beans are available online or at many health food stores.

Feel free to add in any extra fun toppings like chocolate chips, nuts, or Glee bubble gum (which I was able to purchase for $1 a pack at my local health food store).
