Colorful and Easy Popsicles

As far as summers go this has been a cold one for Minnesota (it was still snowing here on May 16th!), but that's not all bad.  Most days have been at about 78 degrees with a breeze, which has been awesome!

However, we are about to have another small bout of temperatures in the 90's, and I know that many of you in the lower US, and other countries, have been facing hot temperatures all summer long.


Here are some fun, colorful, and super easy treats to help cool you off.  And by easy I mean it's wonderfully ridiculous how easy these are to make!  

 


Watermelon Popsicles 

Watermelon is super healthy, and very hydrating to eat, but we were all getting a bit bored with just eating it.  In steps popsicles.


To make these use a spoon to or knife to carve out the inside of the watermelon.





Put the chunks straight into a blender.  Blend until it becomes a fairly smooth liquid.


Then pour the watermelon liquid straight into the popsicle molds, and you're done.  Super easy right!?


I used half a medium sized melon, but a quarter of one would have been enough for 8 popsicle molds.




The Green Gobblers



For a little variation on the above I used honey dew melon.


Simply put large chunks of the melon (minus the rind) into the blender and liquefy.  Pour into molds, let freeze, and enjoy!



If you like things a little sweeter try adding 1/2 to 1 tsp of honey to the mixture while you're liquefying it.




A neighbor boy came over and had one of the watermelon ones (without honey) with us.  He couldn't believe it was made of just watermelon because he loved the taste so much!

Target, Walmart and many other stores carry popsicle molds.  If you really hate plastic you can buy steel ones online.




Got some left over juice?  Chill it in the refrigerator then enjoy it's refreshing taste!
