Homemade Chocolate

I don't know what it's been lately but I've been loving chocolate!  Perhaps it's a stress thing, okay it's stress eating, but if you're going to stress eat it may as well have good nutrients packed in there too, right?

Keeping in mind all things in moderation, here's a recipe that is sure to put a smile on your face for how crazy good it tastes, and for the fact that all the ingredients are healthy!

These little bites of heaven are just as tasty, if not even more so, than anything store bought.  What makes them even more awesome is that they're super easy to make.

The chocolate recipe only uses cacao powder (or cocoa powder), coconut oil, and maple syrup.  If you like a fudgier taste I recommend adding a tsp. of vanilla extract to the mix.

Mini peanut butter cups are the brain child from www.rebootwithjoe.com.  To get the 3 ingredient recipe click here.

When I'm craving chocolate, and too lazy to make the whole peanut butter cups, I just make the chocolate portion and pour it into a pan to harden.  It's ready in only 30 minutes!

I then just break off chunks of chocolate and eat way too much of it, or dip it into peanut butter.  Next time I'd like to mix it up a bit, maybe add some nuts or peppermint extract for variety.

Have fun enjoying chocolate that's full of antioxidants and healthy fats!
