Coconut Chai Pancakes

As winter seems to be linger forever into Minnesota's spring, I thought I'd cheer myself and my family up with a new recipe.

The ingredients mixed up quickly and allowed for lunch to be made in about 25 minutes (that's factoring in that I'm a bit slow for being very meticulous while cooking :).  Yes, I did make breakfast for dinner, and I'm still in my pajamas.  Spring needs to come soon.

As my youngest daughter can't have anything with wheat in it I try to only make one kind of pancakes, instead of two recipes, when I make them.

Today's happy find is from Against All Grains, where there are tons of very yummy looking grain free recipes!

I didn't change any parts of the recipe, except that I used coconut milk instead of almond milk (any kind of milk is fine), and the tea bags I had were Coconut Chai instead of vanilla.  No major changes.

The pancakes were pretty good.  Don't over cook them as they will dry out.  We especially loved smothering them in grass fed butter and real maple syrup!
