Baked Chicken Stir Fry

Have you ever had one of those "aha!" moments with food, where you suddenly saw a dish in a way you'd never seen it before?  I had one of those with Oriental Chicken Stir Fry today, and I am so glad I did!


I regularly think about friends of mine that are full time working moms.  They have such busy days, with few breaks, and then come home needing to make dinner and take care of kids.  My heart goes out to all of you amazing women and men who do this daily.


With that in mind, I'm oh so happy to share this new recipe with you that is healthy, and also probably the easiest meal in the world to make!

To make the Oriental Chicken bake you only need 4 ingredients.


1 cup Quick cooking Brown Rice (I like organic because it's 4 times lower in arsenic)

A bag of frozen Stir Fry Vegetables (about 16 oz.)

1 Pound of Chicken thighs or breast (preferably organic and pasture raised so they have more nutrients)

Trader Joe's Island Soyaki suace, or Teriyaki sauce



Preheat the oven to 375 degrees.  Lightly spray olive oil onto a 9 X 13 inch baking dish.  Spread the rice out on the bottom of the pan.  Put the chicken in on top of the rice.  Pour 1 3/4 cups of water, and 1/2 cup of the Soyaki sauce, over it all.

Cover with aluminum foil and bake for 20 minutes. Take out of the oven and put the frozen vegetables in, then return to the oven for 30-40 more minutes, or until the chicken is done.  Take out of the oven and pour a little more sauce over the chicken and vegetables.

Eat and smile about how easy that was to make a healthy meal!


I was a little concerned about the food being enough for our family of 5, we aren't light eaters here.  It turned out to be very filling food, and so we had enough left overs for 1 more person to have eaten with us.

The family all gave it the thumbs up, and so I can declare dinner a success.

I'm thinking for a dish that I can cook for my dinner later because my parents will going to visit me on that time. I think this one is suited for us. I will try to make this. Anyway, thank you for sharing!
