Squash Pizzas!

I know the name "squash pizza" sounds a little gross, but these little treats are anything but that.  Our whole family loves pizza!  I mean really loves pizza.  

In my humble opinion the unhealthiest part of a pizza is the crust.  So what's a person to do, but swap it out for squash of course!  Okay not so obvious of a choice, but it truly makes for a great and healthy recipe.

When you substitute the bread for butternut squash you are now giving yourself a nutritional boost.  Butternut squash is a good source of fiber, vitamin A, potassium, and vitamin C.

They were easy to make.  I might try baking them next time, because I don't like standing at the stove for so long waiting for them to cook.  It was pretty easy peasy though!  

To bake them I'd brush the slices on both sides with melted butter or coconut oil.  I cooked some of them with the coconut oil and some with the butter and they all tasted great.  The butter had a flavor a little closer to bread, but the coconut flavor was also really good.
