Summer Treats!

Hey guys!  Want some summer treats to go along with your summer fun?  Here are some tasty treats that are also pretty good for you and your kiddos...

Homemade Marshmallows

This recipe was so EASY!!  I love how they actually taste, and texture wise feel, like real marshmallows!  The recipe for these yummy treats can be foud at the Urban Poser.

My picture here shows them as they're starting to set.  I added the chocolate chips to easily make them into s'mores!

Enjoy gobbling them up and roasting them!  If you happen to have extras left over, mine kept really well in a tupperware lined with parchment paper.  They kept in the frig for a couple weeks till we could eat them all!

Green Popsicles

These are very healthy and very easy to make!  Sorry I don't have a picture of these, but I think you can easily picture them. :)  Kids love color and get a kick out of how green these are!

The directions are so simple they are barely even directions.  Take one ripe honey dew melon, discard the seeds and cut off the rind.  Chop it into large chunks and put them all into a food processor (or a blender may work).  Process until liquidy.  Add 1/2 to 1 tsp of honey and pulse until mixed.  Put into a liquid measuring cup for easy pouring.  Pour into popsicle molds, freeze and enjoy a refreshing and delicious treat!

Tricolored Berry and Kefir Popsicles

The full recipe can be found here from Jenny at Nourished Kitchen (who has a lot of fantastic recipes!).  My kids loved these!  Especially my oldest daughter who tends to love sugar.  If you don't have kefir (which they sell in at Target and Trader Joe's in the dairy section), then maybe vanilla yogurt would be worth a try.

  • 1 lb raspberries and/ or strawberries
  • up to 1/4 cup honey (divided)
  • 1 Tbsp vanilla extract
  • 1 cup milk kefir
  • 2 heaping Tbsp blueberries
